It’s summertime and that means fresh produce is at its finest! Variety and color explode from your grocer’s shelves and take center stage at the local Farmer’s Market. Why not take advantage of the affordability and not to mention flavor of your favorite summertime fruits and veggies. Read on for great ideas!

Spice it UP Right!

Grilling Greatness Fire up the grill and put on the…fruits and veggies? That’s right grilling fruits and vegetables is a healthy way to bring out their natural flavors and add excitement to any meal. The American Dietetics Association provides the following suggestions for grilling greatness.

  • Baste firm vegetables like peppers, corn, eggplant or onions and season with herbs. Place on a hot grill until they are tender and brown- usually about 10 to 15 minutes.
  • Place sliced zucchini and carrots on heavy-duty foil and sprinkle with a little water and seasoning. Wrap the foil and grill six to eight minutes or until vegetables are tender.
  • Make kabobs out of pineapples, peaches and bananas, grill on low heat until the fruit is hot and slightly golden.

Fresh Herbs and Spices Bring on the flavor but not the salt! Steam vegetables to perfection and spice them up with fresh herbs from your garden (or someone else’s).

For a healthy treat try pureeing fresh strawberries and freezing in Popsicle molds until firm. Then enjoy! Want to simplify the process? Use 100% fruit juice in place of the pureed fruit. Don’t have Popsicle molds? Create perfect portions using an ice cube tray or 2-4 ounce paper cups and Popsicle sticks.
